Tanya Rose, co-owner and chef of Nourish, dished up a cooking demonstration on King5’s New Day Northwest daytime program on President’s Day.
Rose said the history of the restaurant’s location and its notoriety for being a gluten-free restaurant caught the producer’s eye and she was invited to appear on the show.
On the show, Rose demonstrated — in about seven to eight minutes — how to cook a clam dish two ways and how to cook Nourish’s signature gluten and dairy-free carrot cake.
Tanya and her husband David opened Nourish six years ago. The restaurant has been recognized for its locally-sourced, organic and gluten-free food, as well as the owners’ dedication toward being a sustainable restaurant.
About 15 percent of the restaurant’s food is grown on the property, Rose said, while much of the produce is bought from local farmers in the area.
In 2018, Rose said Nourish received a Platinum certification level — the top award — from Eat Real for its commitment to sustainability and humane food sourcing. (Eat Real is a nonprofit that aspires to fight diet-related disease by working to transform the food system to better align with consumer health interests.)
Much of the excess food at Nourish is composted or given to pigs and the chicken and lamb served at the restaurant are certified humane.
Rose said Nourish is one of six businesses in the country to receive an Eat Real Platinum certification.
Over the next year, Rose said the restaurant owners will look for ways to expand on sustainability practices with a focus on “reduce, reuse and reycle.”
