Learn how to get ‘fearless’ with your canning

Local author Victoria Redhed Miller presents “Fearless Pressure Canning” at two peninsula libraries in September. Miller speaks at 4 p.m. Wednesday, Sept. 4, at the Port Angeles Library, 2210 S. Peabody St., and at 6:30 p.m. Monday, Sept. 9, at the Sequim Library, 630 N. Sequim Ave.

Ever wanted to use a pressure canner but had misgivings about safety? Pressure canning is the only way to safely preserve low-acid foods like meats and vegetables at home. Miller, who uses her pressure canner year-round, aims to convince attendees to set aside fears and try it for themselves.

“Come prepared for a fun, fast-paced class and leave with a new resolve to dust off that pressure canner and put it to good use,” event organizers say. There will be time for questions and a handout to take home.

Registration for the programs is required; visit www.nols.org/pressure-canning or call a NOLS branch to register.

Miller is a Certified Master Food Preserver and has been canning for more than 40 years. She is the author of “From No-Knead to Sourdough: A Simpler Approach to Handmade Bread,” “Pure Poultry” and the award-winning “Craft Distilling.”

A regular speaker at sustainable-living events around the country as well as locally, she lives with her husband on an off-the-grid farm near Sequim.

This program supported by the Friends of Sequim Library and Port Angeles Friends of the Library.
