Here are Clallam County Environmental Health Services’ inspections of restaurant and food businesses for the month of November.
Inspectors visited 51 establishments, and found 26 locations with perfect scores, including one location that had a reinspection.

(5-point deduction): Raw food of animal origin held in a manner that may cause cross contamination of ready-to-eat food, with chicken in milk cooler near ready-to-eat foods. Correct by Nov. 21. No follow-up required.

(8-point deduction): Person in charge did not have a valid Food Worker’s Card on-site; provide thermometers in all refrigerators to monitor temperatures by Nov. 12. No follow-up required.

(15-point deduction): Employees are not properly trained in food safety as it relates to their assigned duties; salmon and imitation crab read temperatures of 48 degrees and 52 degrees with proper cold holding at 41 degrees or below. Correct by Nov. 14. No follow-up required.

(15-point deduction): must post current Certified Food Protection Manager certificate on site for verification by Dec. 31; shredded fish read a temperature of 45 degrees and must be 41 degrees or below; clean inside of the ice machine more often to prevent dirt accumulation. • The Great Northern Coffee Bar, 118 W. First St., Port Angeles
(15-point deduction): One person on staff must have a Certified Food Protection Manager certificate by Dec. 11; water from the handwashing sink at the coffee bar was measured at a temperature less than 100 degrees. Correct by Nov. 21. Follow-up inspection required.

(15-point deduction): Employees are not properly sanitizing cleaned multi-use equipment and utensils;
A sanitizer test kit is not being used to ensure the chemical sanitizing solutions(s) are the proper concentration; and food-contact surfaces are not being sanitized and no sanitizer is being dispensed into the mechanical warewashing machine (corrected during inspection). (20-point deduction): Employees are not properly trained in food safety as it relates to their assigned duties, correct by Dec. 8; soap was not provided at the handwashing sinks, correct by Nov. 24; and warewashing sink observed for handwashing, correct by Nov. 25. No follow-up required.

(30-point deduction): Employees are not properly trained in food safety as it relates to their assigned duties, correct by Nov. 27; employees observed handling ready-to-eat food with their bare hands, such as slicing turkey at the meat slicer without gloves. • Oak Street Bistro, 117 N. Oak St., Port Angeles
(30-point deduction): Employees are not aware of or are not practicing proper methods to rapidly cool potentially hazardous food (correct by Nov. 27); food was cooled using improper methods (correct by Nov. 13). No follow-up required.
• Higher Grounds Espresso C Street, 802 S. C St., Port Angeles
(32-point deduction): Person in charge is unable to demonstrate knowledge of the regulations to the regulatory authority representative (correct by Nov. 17); Blender pitchers were observed on the counter at room temperature, potentially hazardous food cannot be stored at room temperature unless Time as a Control is used, and use only the three compartment sink for wash, rinse, sanitize (correct by Nov. 14); and floor and floor covering in work area is not smooth and needs to be refinished or replaced (correct by Nov. 27).
