Farm to Table: The power of the potato

There is a colorful assortment of potatoes available at the Sequim Farmers Market this time of year.

If you have a recipe in mind and aren’t quite sure which potatoes will be the right fit, here is a quick guide to some of the different types of potatoes and their culinary uses:

Potatoes with red skin and white flesh fall in the category of “waxy” potatoes. They are characteristically high in moisture with a smooth texture and thin skin, and they hold their shape when cooked. These are ideal for boiling and roasting, and are great for making potato salads and gratins.

Yellow potatoes are versatile in the kitchen, with a creamy texture that is light enough to mash but moist enough to hold their shape when steamed, boiled, pan fried or roasted.

Fingerlings are a specialty potato with thin, tender skins that are most outstanding when roasted.

Purple potatoes are as versatile as yellow potatoes, and make an excellent complement when served in a dish alongside yellow and red potatoes. They are delicious when pan-fried, and are unique in their high levels of antioxidants.

To prepare this Farmers Market Pot Roast recipe, any of these potatoes will do! At the Sequim Farmers Market, you will find all of the ingredients you need:

In a large skillet with olive oil, brown a chuck roast or pot roast from the Calf-inated Cow Farm on all sides, sprinkling with salt and pepper.

Then place the roast in a large oven-safe pot with a lid, nestled among Nash’s Farm carrots, River Run Farm potatoes and whole cloves of garlic from Sea Basket Farm.

Add approximately 2 cups of broth to the pot, and generously season the roast and vegetables with Olympic Onion Powder and dried thyme leaves.

Roast at 325 degrees for about 4 hours, until the meat is very tender and is easily pulled apart with two forks.

Garnish with Nash’s fresh Italian parsley.

Serve with a side of lightly steamed broccoli from the Sequim Farmers Market.

Sept. 29 is Kid’s Day at the Sequim Farmers Market. Visit the Activity Booth to receive a $2 coupon that can be used to purchase fruits and vegetables at the market, available while supplies last.

WSU Clallam County Extension and the Sequim Farmers Market are excited to partner with the YMCA this Saturday for the Kid’s Day event. Staff from the YMCA will present a compression-only CPR demonstration from 10:30-11 a.m., with a chance for youths to get hands-on practice with manikins.

Be sure to stop by the Kid’s Day Activity Booth throughout the market day for lots of fun and various activities for kids of all ages. The YMCA will be there with boxing bags and pads so kids can practice their skills with trained staff. Come find out how safe and fun boxing class can be while also building strength and aerobic health.

The YMCA will have information about their free seventh-grade membership initiative, and kids can participate at the Activity Booth for a chance to win a three-month YMCA membership!
